Vietnam Vacation-Mekong Delta

One of the day tours we took from Saigon was a to the Mekong Delta. This region of Vietnam thrives on the Mekong River and it's off-shutes. We boarded a small boat, Cai Be Princess, and took off to explore.

The markets in this region are on the rivers themselves. Most boats have a bamboo stick raised at he front of the boat. At the top of the stick hangs the item sold on the boat--watermelons, yams, sweet potatoes, pineapple, etc.
Along the way we stopped at a small candy factory. They made caramelized, popped rice cakes. We got to see the process from start to finish. They start by popping the rice (very similar to popping corn!).
Once popped they add the caramel mixture and then roll it out into this large form (sort of like a HUGE rice krispie treat!). After they compact it they cut it into squares and package it. It tasted pretty good. They also make various flavors of coconut candy which was fun to taste as well.Some of the people we saw along the way were happy to see us exploring their part of the world.These kids continued to shout out 'hello' as we passed!
This man didn't seem to care one way or another if we were there! He was pretty focused on his work--fishing.
Along the way they served us fruit (dragon fruit, mini bananas, rambutan and longan) and tea. It was so refreshing to nibble on the sweet fruit, feel the breeze and enjoy our surroundings.
We ended our tour with a yummy lunch at this restaurant. There was certainly no shortage of tasty food on this trip!
